1 head garlic, crushed
2 cups heavy cream

Blitz ingredients together in a food processor for about 10 seconds. Don't let it run too long or your cream will whip. You want it to thicken a little, but it should still be pourable. It's going to be overwhelmingly garlickly, and you might think you've made a mistake, but the cooking process (as well as pairing it with other flavours) will help balance things out.
