This is a heavy guy, with not many redeeming qualities from a health standpoint, but it's pizza, so...
Mandolin a yukon gold potato into about 1/8" slices, and pop those into some salted, boiling water for about 4-5 mins (they shouldn't be falling apart). Rinse them in cold water so they stop cooking, and then lay them out on a kitchen towel to dry.
Jury's still out on how best to put this pizza together. I didn't put the potato on top when I made it and I think I'll try that next time, though I doubt it will be in the oven long enough to give me the cook I'm dreaming of.
I put the white sauce down, and then layered in the slices of potato on top of one another, covering the entire surface of the dough. Then I put on the fried sweet onion (I fried them very quickly just to take the edge off), and topped with mozzarella.
Pray for a good white sauce cause that's where the flavour is.
